Can't Go Wrong Stir-Fry

Ingredients makes approx 2 servings:
2 Tyson's Frozen Chicken Breast
2 cups Minute Rice (you might be thinking Minute Rice? Trust me, once you get the sauce in the rice, you won't be able tell a difference...saves a lot of time)
1 Kirkland Signature Normandy Style Frozen Vegetable Blend
2 eggs
1 cup Mr Yoshida's Marinade & Cooking Sauce
1 table spoon of minced garlic from a jar
2 table spoons of olive oil
- Defrost the chicken in the microwave.
- Poke holes in the defrosted chicken with a fork... this allows the cooking sauce to soak into the chicken.
- Cut the chicken into medium sized strips.
- Put the chicken in a bowl and pour the 1 cup of marinade & sauce over it, let it soak for a good 5 minutes or so... as you're waiting go ahead and put the 1 table spoon of minced garlic over it.
- Cook your rice and when you take off the burner, pour 2 table spoons of olive oil over it (makes the rice more sticky which you want).
- Heat the stir-fry skillet on medium to get it ready.
- Cook your scrambled eggs in a separate pan, don't scramble when in the pan though just let it cook flat.
- By this time, your skillet should be ready so pour the bowl of chicken with the marinade into the heated skillet.
- Cook the chicken by itself for about 10 to 15 minutes on medium making sure to turn it every so often.
- The chicken should look about done at this point so pour as much as desired but not too much of the vegetables into the skillet mix.
- Toss and turn your frozen vegetables along with the chicken for a good 10 minutes.
- Now, comes the fun part, pour your rice into the skillet mix and toss and turn for another good 3 to 5 minutes to let everything blend together and so the sauce soaks nicely into the rice...this is also a good time to put your cooked eggs in the mix and toss for an additional minute.

Note: Feel free to buy your own brands for the ingredients but these are the brands I've learned are the best quality for maximum taste especially Mr. Yoshida's.

Ha ha.. right on! Actually, it is pretty much a mid-week every week in my family! I need some new recipes....got any?
